Ingredients For 3 servings
3 peppers 1 small cup rice of your choice (here: red and wholemeal rice) 1 cup frozen peas 2 small carrots 1 onion 2 cloves garlic 1 tbsp paprika powder 1/2 tsp dried oregano 1 pinch dried thyme 300ml vegetable stock
Cook the rice according to the packing instructions in salt water. Peel the carrots and chop finely. peel the onion and garlic and chop finely. Carefully cut off the top of the peppers and hollow out the peppers. Heat a little oil in a pan. Sweat the onion, garlic, carrots and peas. Drain the rice and add to the vegetables. Add the spices, mix everything and fill in the peppers. You can squeeze everything a little harder into the peppers. Preheat the oven to 180°C circulating air. Place the stuffed peppers in a bake dish, pour in broth and cook for 20-30min.

Yannick Alleno – 10 Michelin Stars
Eighty restaurants worldwide are managed by Yannick Alleno. Situated inside the Champs-Élysées gardens, His Alléno, Paris au Pavillon Ledoyen is one of Paris’s oldest restaurants. The Michelin stars constellation includes three star establishments in the French Michelin Guide 2020. This is the first constellation. In 2020, the Ledoyen Pavilion became the world’s most prominent autonomous facility.
It’s not only about obtaining stars, this French chef. Yannick Alléno has been researching and developing French food since 2013 and has started his own movement called Modern Cuisine. He researched sauces extensively and even developed Extractions® as part of his study. Yannick adds that this method enables flavours to be concentrated and perfected, giving them structure, lengthy finish and minerality.
