Chef with the Most Michelin Stars

Seiji Yamamoto – 7 Michelin Stars

Seiji Yamamoto, one of the most legendary Japanese chefs of the century, has renovated his anatomy by sending an eel to a CT scan. In addition to his dedication to learning the science of cooking, he has also combined the famous kaiseki cuisine traditions with current molecular gastronomy techniques.

The Yamamoto’s Ryugin Restaurant became a target for other culinary talents, like JoΓ«l Robuchon, ever since it opened. He currently has two branches around the world, one in Hong Kong and the other in Taipei, which are both listed in Asia’s 50 Best Restaurants.

His style of cooking is intended to represent the valuation of Japanish delicacies by converting plain materials into works of art as a culinary light for over a decade and half. In 2019, he won the American Express Icon Award as the first ever winner, nodding to his contribution of integration of avant-garde cuisine with historic Japanese customs.
